Which of you knows Scamorzone? Nobody I bet. If I tell you Caciocavallo, now you understand what I'm talking about. I tell you this to explain that the Scomorzone as you realize is nothing but a seasoned scamorza larger than normal.
Much like caciocavallo, especially inexperienced eyes, the scamorzone is aged at the Montrone company in special rooms only for maturing. With this maturing the scamorzone acquires a unique flavor with a particular "holes".
The scamorzone is a typical product from Puglia and above all little known but rather worthy to taste.
The difference between Scamorzone and Caciocavallo are very few, almost nil. The name derives from the seasoning that is made by binding it in pairs and made to season "on horseback" of a horizontal stick.
There are various types each with its characteristics, but certainly the most famous is the Caciocavallo hanged.
It is a spun paste cheese produced with cows' milk bred in the wild, ensuring a high qualitative and nutritional value of milk.
It has a semi-hard, elastic rind, straw-yellow in color. The pasta is also straw-yellow in color, compact, without holes.
It has an aromatic, sweet taste, with the scent of milk and straw. Caciocavallo is used in many types of dishes of the Mediterranean tradition.
