The red Castel del Monte di Grifo is composed of a precious blend of Nero di Troia and Montepulciano

The grapes, as soon as they are harvested, are taken to the cellar for the selection of the bunches and the subsequent crushing and destemming. A pre-fermentation maceration is then carried out at a controlled temperature for 24/48 hours, then the must is left to ferment in steel for 7/10 days, always at a controlled temperature. After racking, the wine undergoes malolactic fermentation and then goes on to bottling. After a few months in the bottle it is put on the market.

She sports a ruby ​​red dress with purple hues. The exuberant aromas of blackberries and plums, plums and black cherries, red flowers and mint candies, anticipate an important structure to the taste. With the dense tannic texture, alcohol and freshness create the right harmony for a finish to remember for hours.

Perfect for enhancing first courses with a strong taste and roasts. Some types of dishes that are ideal with this Grifo include Lamb with aromatic herbs, eggplant meatballs in sauce, horse sausage in red wine and baked rabbit.
