The Grifo winery offers an interesting wine from its best Nero di Troia grapes, typical of Puglia and the vineyards that welcome Castel del Monte.

The Nero di Troia grapes, as soon as they are harvested, are taken to the cellar for the selection of the bunches and subsequent crushing and destemming. A pre-fermentation maceration is then carried out at a controlled temperature for 24/48 hours, then the must is left to ferment with selected yeasts in steel for 7/10 days. Subsequently, it is softly pressed. Also in steel, the wine undergoes malolactic fermentation and then passes to a short refinement in barrique. After bottling, it spends a few months in glass before being put on the market.

In the glass of seductive and intriguing ruby ​​red color. Its floral scent of freshly wilted violets is elegant. Blackberries, blueberries and black cherries intertwine with the typical notes of cinchona and graphite of the vine while, in the background, spices, undergrowth and dark tobacco appear. Warm taste and vigorous tannic texture. It closes persistently on fruity and toasted notes.

The ideal dishes for this wine are legumes with knife-tip sausage, roast leg of lamb, roast suckling pig, stuffed chicken and seasoned caciocavallo.
