The Cantina del Notaio, for the red Il Patto, uses the best Aglianico del Vulture grapes, whose selection takes place manually in boxes in the second / third decade of October when the ripening process is now in the crucial phase. Maceration lasts about 10 days and vinification takes place at a controlled temperature in stainless steel and responds to a more traditional type and model of processing and type of wine. Finally, it matures in natural volcanic tuff caves, in French oak barrels or barrels, for a period of at least 12 months.
From the ruby red color with garnet reflections, bright and impenetrable, the nose recalls ripe cherry and plum, accompanied by spicy hints and licorice root. In the mouth it is rich, full, well balanced, with evident notes of cherry, a slightly spicy marasca cherry finish and with a pleasant tannicity that is typical of the grape and traditional processing.
Excellent with meat-based first courses, soups, with roasted red meat and game-based preparations. Very pleasant with cold cuts and cheeses.
