Il Sigillo Aglianico del Vulture Cantine del Notaio

The Cantine del Notaio seal is the traditional soul of Aglianico del Vulture, offered in a modern guise. This red is a concentrated and intense Aglianico, very similar to the warm and overwhelming welcome that makes Basilicata a very special place.

The Sigillo grapes are left to overripe, or even wither, on the plant. Once the desired degree of drying has been reached, the bunches are harvested manually. The intention is to create an Aglianico following the style of the famous Amarone della Valpolicella, a wine of strength and softness. The maceration and fermentation phase follows the refinement in natural volcanic tuff caves, inside French oak barrels and barrels for a period of 24 months. Another 24 months of aging in the bottle complete the maturation.

The seal is a bright garnet red. The nose is characterized by depth that is revealed with notes of wild berries in jam, chocolate and black pepper. Opulent and at the same time elegant, the taste has a soft entrance due to the slight residual sugar. It is velvety and characterized by a long spicy finish.

It goes well with dishes of great structure. Good preparations based on meat and cheeses with a great aromatic persistence. The combination with sweets based on melted bitter cocoa is also very good.
