Bollinger Champagne Special Cuvée

The Special Cuvée represents the soul and dedication of the estate, produced with a blend of Pinot Noir, Chardonnay and Meunier. Primary fermentation takes place between small steel and wood barrels, where the must remains until spring. Refines in the bottle for 3 years and in this long period of time the wine gains delicate aromas, a soft consistency and great aging.

A beautiful golden yellow with a very fine perlage. It is characterized by a beautiful aromatic complexity, with hints of ripe fruit and spices. Notes of peach and nuances of cooked and compote apple are perceived. In the mouth it manages to combine structure, persistence and vivacity in a balanced way. The palate is velvety with flavors of pear, brioche and spices, fresh walnut.

It perfectly accompanies fish, shellfish and white meats. If uncorked for an aperitif, it becomes special with parmesan and prosciutto.
