This Chardonnay of character was born in the Castello della Sala, the Umbrian estate of the Antinori near Orvieto, built in 1350 and bought by Niccolò Antinori in 1940 with the intention of also producing white wines. In 1979 Renzo Cotarella, a world-renowned winemaker, arrived at the court, planting the Chardonnay and enhancing the entire production of the estate. The first Chardonnay is produced in 1994. Immediately after harvesting the grapes are cooled and placed in fermentation vats, from where they are then partly transferred to the barriques to continue alcoholic fermentation and the subsequent maturation for five months. The others remain in contact with their yeasts until the moment of blending. The resulting wine is full-bodied, persuasive, fascinating.
A nice straw yellow color. Pineapple, lily and broom anticipate a balanced taste. In the mouth has prosperous fruity returns complemented by a pleasant flavor in a full and soft body.
On moscardini in guazzetto or on a classic mushroom risotto.
