  • TERRITORY: Salento is identified by three climatic elements: the sun, creator of generous sugar levels, the sea, responsible for the minerality of the wines, and the wind that makes this territory naturally disease-free and particularly suitable for the production of "natural" wines . Characterized by extensive flat areas and modest hilly reliefs, Salento is geologically made up of a limestone structure of medium texture.
  • GRAPES: Susumaniello, a black grape variety native to Puglia, grown in Salento. Its name recalls, in the Apulian dialect, the name of the "donkey" indicating the high productivity of the plant loaded with clusters "like a donkey". After the first decade of the life of the vineyard, the bunch is discharged of grapes and the production loses in quantity but improves in quality, producing wines of great expression.
  • VINIFICATION: Soft pressing to preserve the fruity and floral taste with short contact of the must with the skins for about 10 - 12 hours. This is followed by about two weeks of slow fermentation at a controlled temperature in steel tanks in which refinement is completed. After three months resting in steel, it is bottled.
  • BOUQUET: Fruity and floral with hints of pomegranate, strawberry and rose.
  • TASTE: Fresh, delicate with marked minerality and flavor.
  • VINEYARD ALTITUDE: 100 m a.s.l.
  • SOIL TYPE: Calcareous-clayey
  • TRAINING SYSTEM: Espalier
  • STRAIN DENSITY: 6000 / ha
  • PRODUCTION PER HECTARE: 90 q / ha
  • GRAPE YIELD IN WINE: 65%
  • AVERAGE AGE OF VINES: 20-30 years
  • HARVEST: End of September
  • FERMENTATION: In stainless steel ACIDITY: 6 .0 g / l
