The red sweet peppers are grown in open field in the month of May, and collected manually in August and September. They are washed, selected, cut into layers, salted and placed on drying frames for 3-4 days. During drying, the peppers are repeatedly turned upside down on the frame. It is a demanding and delicate operation, and this is why the company "i contadini" is among the very few companies that work with this technique. The processing ends with the potting in extra virgin olive oil.
To obtain 300 g of dried peppers, 10 kg of fresh peppers are needed.
They have an inimitable flavor, and in the kitchen they give color and taste to your dishes. Excellent as an appetizer, as a side dish, but also to prepare delicious rolls with fresh cheese, tuna and capers.
