The green tomato pate is made with the salentino tomatoes harvested manually in the month of July when they are still unripe, they are grown in open field in the month of May.
Then they are washed, selected, cut into slices and matured in salt. It is a traditional processing method handed down from generation to generation by our grandparents.
The tomatoes are ground together with the capers of Racale (Slow Food's Food Community) whole salt and other Mediterranean spices, then the paté thus obtained is put into extra-virgin olive oil.
It is a product whose processing requires time and care, but the result is really the same as that obtained by our grandmothers
