Ricotta Dura Marzotica is born in the Salento area (province of Lecce) from the non-elastic friable pasca, from the rough crust the taste of this ricotta and slightly savory; flavor that makes it unique and famous throughout the region.

The Ricotta Dura Marzotica is produced at the beginning of spring or even before (from February to May) the name Marzotica recalls the month of March.
