After a short maceration of the skins the vinification is carried out avoiding the contact with the wine The fermentation takes place at a controlled temperature and with the use of selected Bâtonnage yeasts in dacciaio tanks for 40 days.
Sensory characteristics
Bright straw yellow with greenish reflections. It has a good olfactory progression ranging from the aromas of rosemary, typical of the vine, to elder flowers, white and yellow pulp fruits and litchi. The taste is initially soft, then savory and lively, with a good structure and excellent alcohol balance. The persistence of these aromas makes it pleasing, leaving a light and typical bitter note.
At the table
Perfect as an aperitif accompanied by cheese chips or Sardinian ham dishes with fresh bottarga, savory pies of vegetables, tasty dishes based on shellfish seafood and medium cooked or grilled fatty meats Excellent with pecorino cheese and semi-mature cheeses.
