Grapes: Malvasia Bianca, Sauvignon Blanc.

Area: San Marzano, Salento, Puglia. About 100 meters above sea level.

Soil: Shallow and with a medium-fine texture.

Cultivation: Espalier (4,000 vines per hectare).

Harvest: Second and third week of August.

Vinification: Cryomaceration in press for 6-8 hours; subsequent soft pressing of the marc, static cold settling and alcoholic fermentation at 11 ° C.

Aging: In steel.

Organoleptic characteristics: Straw yellow color with greenish reflections; floral scent referable to broom and fruity due to citrus and exotic fruit. Wine with a good acidic, fresh and mineral shoulder.
