SOIL: clayey-silty.

AVERAGE AGE OF THE VINEYARD: 10 years.
HARVEST: Chardonnay first ten days of August; Verdeca first ten days of September.
YIELD PER HA .: 90 q. there.
VINIFICATION: the base wine is obtained from the low temperature fermentation of the must resulting from the soft pressing of the whole grapes. The second fermentation takes place in an autoclave at a temperature of about 15 ° C for a period of two months.
SPUMA: 2 months in autoclave.
