Pancetta Coppata Magrissima Intero

Pancetta Coppata is a seasoned raw sausage obtained from the cup wrapped in pancetta (capocollo). This is then rolled into a cylindrical sausage, which is similar to the rolled pancetta.

The pancetta coppata has several alternating layers of a lean part (the muscle of the animal) with a color ranging from red to light pink, and a fat part of the ivory-white color; Although its appearance differs from the manufacturer and producer, it is generally easy to recognize (although it can be confused with rolled bacon), as it looks like a capocollo with clearly visible, rectangular and irregular pieces of meat.

Pancetta coppata spreads mainly in three regions of Emilia Romagna, Lombardy and Veneto and is not as well known and marketed outside these areas.

It is used as a normal salami, thinly sliced and combined with bread (perhaps toasted and hot to melt the fat) or other baked goods such as tigelle consumed.
