Long tomatoes are grown in open fields in April and May, and harvested manually in July and August. They are washed, selected, cut manually, salted and left to rest on drying frames for 4-5 days.
This is a natural technique and linked to the tradition that our grandfather handed down to us. Immediately after, the tomatoes are washed in water and vinegar and ground together with Racale capers and Mediterranean spices. The paté thus obtained is then potted with extra virgin olive oil.
To get 1 kg of sun-dried tomatoes, you need about 10 kg of fresh tomatoes.
This paté is great for preparing delicious bruschetta or for filling sandwiches and sandwiches. Combined with cheeses it is delicious, and it is even more so if it is skipped with pasta and fresh basil.
