Cantina Diomede makes this red from the most historic grape of Puglia, Nero di Troia. After a partial drying of the grapes in the field, Canace ferments with a long maceration of 15-20 days at a controlled temperature and with selected yeasts. The vinification takes place for 8 months in concrete tanks and 12 months in French barrels.
In the glass it is red with purple hues, its complex bouquet including spices, cocoa, coffee, licorice, ripe red berried fruits, soft and velvety with elegant tannins. The aftertaste is spicy.
Wine that can accompany red meats, aged cheeses and game.
