Cappellaccio Riserva D.O.C.G. Rivera
Cultivated on the hills of the Castel del Monte area, the Cappellaccio expresses all the potential of Aglianico. With its garnet red color, it offers an intense bouquet typical of the variety with notes of ripe red fruit, leather and spices. You may feel a warm and full palate, with great structure and a long finish. The Cappellaccio has an aging capacity that goes from 8 to 10 years.
PAIRINGS
It is suitable to accompany savory dishes based on meat and aged cheeses.
WINE
The grapes are harvested in mid-October. The maceration lasts 12-14 days in steel vinifiers, with frequent pumping over in order to obtain a better extraction of aromatic substances and colorants and, at the same time, to soften the tannic mass.
AGING
The maturation takes place for 12 months, half in French oak barriques of various ages and half in 50 Hl Slavonian oak barrels, achieving great harmony without giving too much wood character. Before bottling, the wine does not undergo cold stabilization. A further one-year refinement in bottle allows to express all the characteristics of the variety.
