Surfacing: The production method by Surfacing consists in letting the fresh milk at a temperature of 15 ° C or lower for at least 8-12 hours, making the cream, that is the fat part of the milk, and at the same time the lighter in terms of weight, you naturally come to the surface.
Churning: With churning butter to obtain butter, the cream must be violently beaten, because this allows to break the fat globules and mix them by letting out all the residual water. This process requires special conditions of acidity of the cream and temperatures below 15 ° C which make the fat particle more fragile and easy to break.
