The history of the Castle of the Hall is linked to the history of the noble family that followed its fate from its construction, started in 1350, until 1518, when Pietro Antonio Monaldeschi della Vipera della Sala died and his wife and cousin Giovanna Monaldeschi della Cervara left him to the charity institute Opera del Duomo in Orvieto. Since 1940 it has been owned by the Antinori family and is the winery’s white forge. Among all the Cervaro della Sala stands out, which since its first harvest in 1985 has been more and more talked about and has been counted in the firmament of the great whites of the peninsula. Refined and intense, structured and persistent, it is made from Chardonnay grapes with a small percentage of Grechetto, an autochthonous grape that brings acidity and binds it even more to the territory. Vinification takes place in barriques of Allier and Troncaise, where the wine ages for six months before being bottled and left to age for another 10 months.
Robe cloaked in shining gold. Prismatic nose with nuances of tropical fruits, candied lemon, mimosa and notes of butter. In the mouth it is absolutely soft with a fresh-savory tension that closes the tasting circle. The finish is very long with pineapple and hazelnuts.

To combine with noodles with porcini mushrooms and scallops, but also excellent with spaghetti with clams and mullet bottarga. Or alone, it helps to meditate.
