To create this type of preserve, the artichokes collected during the day are cleaned and the outer leaves are removed to leave only the central and soft part of the artichoke. once this is done, the peasant artichokes are seasoned mainly with parsley, sage, rosemary. Finally, everything is placed in glass jars and immersed in extra virgin olive oil.
