Primitivo and Negroamaro are two of the most symbolic grapes of the Salento terroir: Apollonio decided to assemble them in Valle Cupa, a robust and energetic Red in which the important alcohol content is supported by a good crispness. The grapes fermented for 35-40 days in wood at a controlled temperature, then aged for 18 months in barriques and large barrels and 6 months in glass. A Salento IGT ready to be drunk, capable of telling the enduring bond between terroir and corporate philosophy, always conceived to give voice and importance to the renowned native Apulian vines.
The glass has an intense and deep ruby red color. The nose is characterized by an interesting and warm aroma of blackberry and blueberry, alternating with more spicy aromas resulting from aging. In the mouth it is powerful, alcoholic, rich, with a good acidic vein. The finish is persistent, characterized by an olfactory aftertaste dominated by licorice.
It has an austere structure, requiring dishes prepared and cooked elaborate. Perfect with game and spicy cheeses, it is to be tried with veal kidney lime.

The Madrigale di Produttori di Manduria is a sweet red for special occasions, the result of late harvests of the Primitivo di Manduria. It owes its name to the poem of the same name.
