Fresh, short or medium-aged cheese, raw or soft (for the short-seasoned type, also known as first salt) or hard (for the season aged from a minimum of 30 days to a maximum of 6 months), fat, produced with whole and pasteurized cow's milk.
It is produced in the "Primo sale" and "Stagionato" types, also with the addition of flavoring (aromatic herbs or chilli pepper).
It has a cylindrical shape with flat faces of various sizes.
In the "Primo sale" the crust is soft, elastic, white in color; the pasta is moist, white in color and the taste is sweet.
In the "Stagionato" type, the rind is quite hard, dry, straw-yellow in color, tending towards brown; the pasta is rather hard, unctuous, straw-colored with fine holes, irregularly distributed and the taste becomes slightly salty and spicy. Cheese "table", which is consumed accompanied by fresh salads, both as an ingredient of typical recipes (used above all the seasoned for its completeness of flavors).
It goes well with dry white wines, of low alcohol content and slightly aromatic (when it is not seasoned); when it is sufficiently seasoned it is necessary to have white or red wines with a good body, warm enough, even slightly aromatic.
