DESCRIZIONE
Prodotto nella zona di Alberobello in Puglia, il Verdeca è un bianco dal color giallo paglierino prodotto in cantina Cantele. Un vino fruttato e floreale con sentori di mela cotogna sambuco e pesco al naso risulta anche intenso e persistente. Gustandolo avvertiamo una leggera sensazione di freschezza con un retrogusto ammaliante e molto persistente, di buona complessità retro olfattiva.
ABBINAMENTI
Cucina di pesce, formaggi freschi e leggeri. Primi piatti delicati nelle componenti aromatiche o speziate.
VINIFICAZIONE
Le uve vengono diraspate e, senza essere pigiate, vengono raffreddate a circa 8°C. A questa temperatura sostano per alcune ore per aumentare l’estrazione di aromi primari. Il mosto così ottenuto per pressatura soffice decanta a freddo per consentire una naturale chiarificazione. La fermentazione alcolica avviene in serbatoi in acciaio inox a 14°C.
