PRODUCTION

To prepare the cherry jam you have to wash them well and remove the stone. Put them in a saucepan and let them flake over medium heat for about 20 minutes, taking care to stir. Once ready, remove from heat and pass the cherries through a vegetable mill, thus extracting juice and part of the pulp. Put everything in a saucepan, add the sugar, mix and cook over low heat until you reach a temperature of 108 °. Finally, let it cool and pour it into the jars.
