The Pinot Noir de la cave Falkestein est une étiquette dédiée à ceux qui recherchent une fraîcheur raffinée, des facettes aromatiques délicates et qui n'aiment pas la puissance et la concentration.

Le cépage à partir duquel ce vin rouge est issu est le Pinot Noir, a cépage international de France, qui est cependant également base dans le Tyrol du Sud. Les vendanges sont manuelles à la mi-septembre et la fermentation se déroule dans de grandes cuves en chêne, with pigeages manuels and one period of time to macération pelliculaire of 3 or 4 semaines. Le vin vieillit en fûts et tonneau de chêne français pendant environ un an, puis 7 mois en cuves d'acier et term affinage par un an en bouteille avant de sortir de la cave.
