Product Details

The history of this champagne, whose first harvest dates back to 1959, is relatively young but, only after resting for 12 years in the underground cellars of Epernay, could give the best of itself in 1971, on the occasion of the Pharaonic celebrations for the 2,500 years since the foundation of the Persian Empire of Cyrus the Great. Very few chosen to taste it on that occasion, we can now all enjoy this great rosé version, which confirms the style and elegance of Dom Pérignon. The 2008 vintage is defined as 'reckless' and built on a Pinot Noir that comes from two vineyards, Chants de Linottes in Hautvillers and Vauzelles in Aÿ, for a real search for harmony.

Elegant, complex and articulated, it gives the view a very fine perlage and then opens, instantly on hints of small fruits such as wild strawberry and raspberries, to which are joined iris, violet and powder, to end with a memory of camphor. The mouthfeel is exuberant, taut and structured, with a lively fresh texture that makes it a distinctive feature, revealing the heart of the Pinot Noir and all the beauty that surrounds it. The finish is very long with white pepper and peony.

From the best of itself on a boiled lobster and topped with a drizzle of extra virgin olive oil, but can also be accompanied by an excellent Culatello di Zibello.
